Ingredient Notes

  • Potatoes: Choose three large potatoes for this recipe, preferably Russet or Yukon Gold varieties. These potatoes have a higher starch content, which gives the mojos their signature fluffy interior and crispy exterior. Make sure to wash and clean the potatoes thoroughly to remove any dirt before slicing them into thin rounds.
  • Eggs: Make sure to beat the eggs until they’re well combined and frothy for the best results. This will help the breading mixture stick to the potato slices better.
  • Evaporated milk is the secret ingredient that helps make the Potato Mojos have a rich and creamy texture. It makes the potatoes taste better by giving them a smooth and delicious covering.
  • Fried chicken breading mix like Ferna brand: This gives your Potato Mojos a crispy and tasty coating similar to Shakey’s. This pre-made mix helps you save time and energy, making the whole process easier while still keeping the original flavor.
  • Paprika: A little bit of paprika gives the mojos a tasty and slightly smoky taste. It adds to the breading mix and makes the dish taste even better.
  • Cooking oil for deep frying

Cooking Tips

Double coat for extra flavor: Using a double coating of breading on the potatoes makes them extra flavorful. It gives them an extra crunchy texture and makes them taste even better.

How to Store?

Wondering about the proper way to store potato mojos? If you can resist the temptation to eat them all at once, that is (hehe!). Just put any extra mojos in a closed container and keep them in the fridge. To warm them up again, put them in the oven at 350°F (175°C) for a short time or re-fry until they become crispy again.
