Pork Pochero is a delicious Filipino dish made with pork, vegetables, bananas, and flavorful spices. This recipe puts a twist on the classic by omitting the use of tomato sauce. 

Ingredients

  • 1/2 kg Pork Belly, cut into pieces

  • 2 bunches of Pechay or Bok Choy

  • 1/2 head Cabbage, sliced

  • 2 Tomatoes, diced

  • 2 Onions, diced

  • 4 cloves Garlic, minced

  • Green beans, sliced

  • 5 pieces Saba Banana

  • 2 pieces Sweet Potato, cubed

  • 3 tbsp Fish Sauce

Directions

  • In a pot, add water and 2 tbsp of salt. Boil the pork until tender. Set aside the pork broth for later use.
  • Fry the sweet potatoes and bananas until lightly browned. Remove them from the pan and drain on paper towels.
  • In the same pan, sauté garlic, onions, and tomatoes until they become soft and fragrant.
  • Add the pork belly and cook until lightly browned.
  • Stir in the fish sauce and cook for about 1 to 2 minutes, allowing the flavors to combine.
  • Pour in the pork broth and bring it to a simmer.
  • Add the green beans and cook for about 2 to 3 minutes, maintaining their crunchiness.
  • Add in the pechay and cook for an additional minute.
  • Finally, add the cabbage and cover the pot. Allow it to cook for 2 more minutes until the cabbage becomes tender yet still slightly crisp.
  • Introduce the fried sweet potatoes and saba bananas to the pot.

  • Adjust the consistency by adding pork broth as needed, ensuring a flavorful and well-balanced dish.
  • Give it a quick taste test and adjust the seasoning if necessary.
