Chicken Guisantes, or simply Chicken with Green Peas, is a delicious Filipino dish that combines tender chicken with green peas. It’s a classic comfort food that warms your belly and the best part is how simple it is to cook – no need to be a kitchen master! Simply sauté some chicken with garlic, onions, and tomatoes, then add the peas and let it all simmer together. The end result? A savory and little sweet sauce that clings to the chicken, making every bite a blast. Serve over rice for a full and savory meal that’s guaranteed to be enjoyed by family and friends.   • 1/2 kilogram of chicken, cut into serving pieces: Select bone-in chicken pieces for added flavor and tenderness. Thighs, drumsticks, or a combination of both work beautifully.
  • I used 2 of 155g cans of green peas. Gently mash them with a fork to release their flavors.
  • Patis (Fish Sauce): This classic Filipino ingredient provides a savory and umami taste. Adjust the amount according to your preference.

Ingredients

  • 500 g chicken, cut into serving pieces

  • 2 155g cans of green peas, slightly mashed

  • 3 cloves of garlic, minced

  • 1 onion, chopped

  • 1 tomato, diced

  • 1 potato, peeled and cubed

  • 1 carrot, peeled and cubed

  • 1 cup of water

  • 1/2 teaspoon ground black pepper

  • Patis (Fish Sauce) to taste

Directions

  • In a deep pan, heat oil over medium heat and sauté the minced garlic, chopped onion, and diced tomato until fragrant and slightly softened.
  • Add the chicken pieces to the pan and stir-fry for about 5 minutes, or until the chicken starts to brown.
  • Season the chicken with fish sauce, adjusting the amount to your preference.
  • Add the slightly mashed green peas to the pan, mixing them well with the chicken.
  • Pour in the water or chicken stock to create a flavorful broth. Cover the pan and let it simmer for about 20 minutes, allowing the flavors to meld together.
  • After the initial simmer, continue cooking for a couple of minutes to thicken the sauce slightly.
  • Add the cubed carrots to the pan and cook for about 3 minutes until they are slightly tender.
  • Add the peeled and cubed potatoes, ensuring they are fully submerged in the sauce. Continue cooking until the potatoes are cooked through but still hold their shape.
  • Adjust the seasonings by adding ground black pepper to taste. Remember to stir gently to incorporate the flavors without breaking the potatoes.
  • Once the potatoes are tender and all the flavors have combined together, your Chicken Guisantes is ready to be served.
